About the Recipe

Packed with healthy fats from almond meal and coconut oil, protein-rich almonds, and the natural sweetness of honey, these Lemon & Coconut Bliss Balls offer sustained energy. The lemon zest adds a burst of vitamin C, while coconut provides fiber, making them a deliciously nutritious treat.

Ingredients

  • 160Ā gĀ nut meal, I used macadamia but almond meal works well Ā 

  • 80Ā gĀ organic desiccated coconutĀ 

  • 60Ā gĀ coconut oilĀ (aprox 1/4 cup, melted)

  • 3 tbsp raw honey, maple syrup or rice malt syrup

  • 1Ā tbspĀ vanilla – extract or essence

  • 1Ā lemon/s – zest and 3-4 tbsp juice

  • 2Ā tbspĀ shredded coconut – for the outside

Preparation

  1. Combine all ingredients thoroughly by hand or in a food processor until well mixed.

  2. Depending on the moisture absorption of the coconut and almond meal, you may need to adjust by adding a little more of either to achieve the right consistency, though they will firm up once chilled.

  3. Shape the mixture into balls, then roll them in shredded coconut for the final touch.

  4. Place in the freezer to chill. Serve directly from the freezer or let thaw in the fridge.
